These simple rules will enable you to make the best birria tacos:

Prepare the Chili Sauce

Starting with the stems and seeds from the ancho and guajillo chilies, in a skillet set over medium heat, dry-toast the chilies for 1-2 minutes, or until aromatic. Set the toasted chilies in a bowl under hot water for 15-20 minutes to rehydrate them. After softened, incorporate the chilies, chipotle pepper, minced garlic, cumin, oregano, cinnamon stick, cloves, and bay leaf. Drizzle a little soaking liquid to help with smooth paste blending.

Marinate the Meat

Cut big pieces of meat; season with salt and pepper. Spoon the chili paste over the steak to ensure it is totally covered. Let the meat marinate for at least 2 hours, even though marinating overnight in the refrigerator produces the best results.
