  1. Cook the pasta according to the instructions on the package, in a large sized pot of boiling salted water, until it reaches the perfect al dente consistency. Drain the pasta, reserving about 1 cup of the pasta cooking water.
  2. Whisk together the egg yolks, grated Parmesan cheese, and creme fraiche/heavy cream until well combined—season with a pinch of salt and black pepper.
  3. In a large pan, melt the butter on low heat. Add the cooked pasta to the skillet and toss to coat it with the butter.
