The Essential Rock Salt and Mustard Oil Ratio for Homemade Mango Pickles

There’s something satisfying about making mango pickle at home, but there are certain fundamentals that you have to master first. Mess up the mangoes, and your aachar turns soupy. Go overboard with the salt, and every bite smacks you in the face. Get stingy with the oil? There is little hope that the mango will taste good and it won’t be stored properly. Fortunately, the base recipe is simple: use firm and green mangoes along with generous amounts of rock salt and mustard oil.

Start with Firm Mangoes

The best pickles start with firm, sour mangoes – no wrinkly or soft ones allowed. Clean them thoroughly and remove all traces of water before you begin cutting. Water is your worst enemy here; it can ruin all your work. Doing online grocery shopping? Throw the mangoes, salt, and mustard oil into the same basket so you’re not running around later.

The Basic Ratio That Works

This is the golden principle – one kilogram of diced raw mango requires approximately 100 grams of rock salt and 200 ml of mustard oil. This is not always a strict formula because different-sized mangoes with different moisture content and a different family recipe can influence the proportions. If you like more salty aachar, you can add some salt, but don’t forget that fixing an overly salted batch is hard to correct.

Why Rock Salt?

Salt isn’t just about flavour here. It draws excess moisture out of the mango pieces and helps preserve the pickle for months. Coarse rock salt is best as it slowly seeps in as everything sits. Don’t just eyeball it; measure the salt. Adding salt is easy, but it’s hard to remove it once it’s added.

Mustard Oil Deserves Attention

Mustard oil packs a punch, especially the kachi ghani kind. If your instructions mention heating the oil, do so, and allow it to cool down before adding it to the mango slices. You will know if the slices are properly coated if they glisten.

Absolutely No Water

This part’s dull, but don’t skip it. Dry your mangoes, knife, cutting board, bowls, and jars. Even the grocery packaging shouldn’t be damp. One drop of water can ruin your whole batch, especially if you’re hoping to enjoy this achar for months.

Patience Pays Off

Don’t expect instant results. Let the time work wonders with the salt, the oil and the spices. In case you choose to put your jar under the sunlight, make sure that it stays clean and dry. In fact, you will notice the gradual transformations of the flavour, hue and even the texture; that is the sign that the pickling process is on track.

Storing Your Pickle

After preparing the pickle, put it in a clean, air-tight glass jar. Use a dry spoon whenever removing some of it. A little caution here keeps your aachar tasting great for ages. When you’re planning your next batch, just buy what you’ll use. And if you find a grocery store near me, stick with it as it makes these seasonal projects a whole lot smoother. Get the salt and oil ratio right, keep that dreaded water away, and give your mangoes time to rest. That’s really all it takes for a homemade pickle you’ll actually crave.
